A 3-TE set has been used by Dallas and NE down in goalline situations. It has also been used when they plan on rushing the ball on a 3rd and short, or even 4th and short. The extra beef in the lineup, with 260+ lb TE, instead of 220lb WR or 245lb FB (unless you have Lo Neal), provides the extra push to help gain the tough yards successfully.
Imagine an elephant package that has 265lb Gates, 290 lb Manu, and 256 lb Krause (or Shea), along with our 5 OL, and then LT and Lo Neal.
That's a lot of beef to throw at the defense to block for LT on a short yardage play.
